The perfect Steak:
Hopkins River Beef is the ideal steak as it's marbling and flavour make it super tender and succulent. A sensation that will not disappoint.
You will need:
- Barbeque, hot plate or frying pan to cook the beef
- Tongs for turning the steak to prevent burning yourself
- Oil bowl and brush to coat the steak before placing it on the hot plate
- A large plate to rest the cooked steak before serving
Method:
Follow these simple steps for cooking steaks to make sure you get the most out of your Hopkins River Beef.
Step 1: Remove your Hopkins River Beef from the fridge one hour prior to desired time of cooking. This allows the beef to return to room temperature which will enable the heat to distribute evenly when cooking.
Step 2: Pre-heat the bbq, hot plate or frying pan to a medium-high heat.
Step 3:Brush both sides of the steak with olive oil to prevent it from sticking to the cooking surface.
Step 4: Using the tongs to turn your steak, cook to your liking (See below to find out when your steak is done)
Step 5: After cooking, place the steaks on a plate, cover with foil and leave aside for 5 minutes to rest.
Cooking Times: (Note cooking times depend on the thickness, below is a guide only)
Thick Steaks (2cm+)
Rare: 2-3 minutes per side
Medium Rare: 3-4 minutes per side (cook on one side until moisture is just visible on surface, then turn)
Medium: 4-5 minutes per side (cook on one side until moisture is pooling on surface, then turn)
Well done: 5-7 minutes per side (cook on one side until moisture is pooling on surface, then turn)
Thin Steaks(2cm-)
Rare: 1-2 minutes per side
Medium Rare: 2-3 minutes per side
Medium: 3-4 minutes per side
Well done: 4-5 minutes per side
Tong/fork test: press your steak while cooking to determine a:
Rare: Very soft like a sponge
Medium Rare: Soft and slightly spongey
Medium: Soft and springy with slight resistance
Well done: Firm with strong resistance
General tips: Minimum poking and prodding and not piercing the outer layer of your steak will maintain juices = more tenderness
Roasting Beef Tips & Cooking Times
Suggested cooking times based on 500g in 200 C pre-heated oven
Rare: 12-15 minutes
Medium Rare: 15-20 Minutes
Medium: 20-25 minutes
Well done: 25-30 minutes
Eg: 2.1kg Eye Fillet, for a medium rare texture cook in oven for about 60-70 minutes.
General tips: try not to turn the meat too often as it will toughen up.
For best results, sear each side before cooking and turn every 15 minutes or so once in the oven.
